I am really loving my greens at the moment. Green vegetables are healthy, energising and make you glow. I tried this Green Omelette and thought it was scrumptious.
Ingredients
2 medium eggs, whisked
1 spring onion, chopped
A few green olives, chopped
1 green chilli, finely chopped
Half a cup of baby spinach, finely chopped
A sprinkle of chilli flakes and black pepper
Oil for frying, 2 tablespoons
Salt to taste
Combine all the ingredients together and cook in a frying pan with a little oil, flip over to cook the other side.
Serve with some orange juice and some salad. Enjoy :)
